Happy St. Patrick's Day...

a day late. Tim and I have been fighting head/sinus colds. The kids are fine, but we are a bit under the weather.


We still made it to church this morning. The kids are fine and full of it ... healthy as can be.

As promised, after church, I let the kids help make Irish Soda Bread. Kelsey and I just sampled and it is so yummy! A cup of tea and a chunk of this...makes anyone feel better!!

Glover Irish Soda Bread Recipe

3 cups of all-purpose flour

1/2 cup sugar

2 Tbs. softened butter

2 tsp. baking powder

1/2 tsp. salt

1/2 cup currants

1 1/2 cups buttermilk

2 eggs (plus another for the outside egg wash-you can just use yolk if you want along with a splash of buttermilk)

1. Preheat oven to 350 degrees. Get a cookie sheet ready and cover with a sheet of aluminum foil.

2. Combine flour, baking powder, butter, salt and sugar. Beat the eggs with buttermilk. Add the 2 eggs and buttermilk into the flour mixture; stir in currants.

3. Stir the dough and flour your hands and the top of the mixture and knead. It's usually a little wet, so I always add more flour (I don't measure I just sprinkle until it has a good consistency.)

4.On a floured surface, shape into a dome shape.

5. Cut a cross on the top (not very deep) and then take a mixture of one egg (some folks just use the yolk--I just use the whole egg) and a splash of buttermilk to brush on the top of the bread.

6. Cook for 30 minutes (approximately) or until it is nice and golden on the outside and a toothpick comes out clean from the middle.

This is my own modified version of a few recipes that I had. This one works good for us. Of course, I had to make a 1/2 loaf for Ryan without the currants. I also believe some Irish Soda Bread uses sour cream instead of buttermilk and the top is sprinkled with caraway seeds.
